Pritong Talong (Pan Fried Eggplant)
Pritong Talong or Pan Fried Eggplant is an easy Filipino dish made out of thinly sliced eggplant seasoned with salt and pepper then pan fried. Serve hot with rice and soy sauce for dipping.

- 2 Japanese eggplants
- 1 egg
- Kosher salt to taste
- freshly ground black pepper to taste
- vegetable oil for frying
Slice the eggplants in 3 portions lengthwise and cut in half cross wise
Lightly salt on both sides to extract liquid. Let stand for about 10 minutes. Soak up liquid with paper towels.
In a bowl, whisk egg. Add salt and pepper.
Heat a non-stick pan then add small amount of oil.
Dip eggplant into egg mixture, then pan fry for 3 minutes on each side or until golden brown.
Serve eggplant with soy sauce and rice.
