Dutch Apple Pancake

Whenever we go apple picking, I look at the bags of apples on my counter and think about what I’m going to do with them. My go-to’s are Dutch Apple Pancakes, Apple Pocket Pies, and Apple Crumbles/Crisps.

Dutch Apple Pancakes are easy to make and can impress your guests once plated and dusted with a touch of confectioners sugar.

Ingredients

Directions

  1. In a small pot, melt butter and sauté apples with sugar and cinnamon
  2. In a bowl, whisk eggs, flour, and lemon zest
  3. Pour batter into a pan (with non-stick spray) and assemble apples on top
  4. Bake at 400 for 15 minutes
  5. Dust with confectioners sugar and enjoy immediately

Side note: I also used Bob’s Red Mill gluten-free flour in this recipe and it came out great!
