Blistered Shishito Peppers

Blistered Shishito Peppers are a great appetizer or snack. For the most part, they are mild and sweet, but occasionally you may bite into a hot one. How do you tell if a shishito pepper is hot or not? Just bite into it. You can find these peppers are gourmet stores or in farmers markets. I normally purchase them at Eataly in NYC for about $5 per pound.

Ingredients

Directions

  1. Wash and dry shishito peppers.
  2. Heat 1 tablespoon oil in a large skillet over high heat until just smoking.
  3. Cook half of the peppers, turning occasionally, until they begin to blister on all sides. Transfer to a bowl, sprinkle with salt, and toss to coat.
  4. Repeat with remaining peppers, remaining 1 tablespoon oil, and more salt.
