Created by James Beard nominated Chef Dean James Max, Parallel Post is a new farm-to-table restaurant in Trumbull Marriott Merritt Parkway in Trumbull, Conn. This modern-American restaurant focuses on seasonal and regional cuisine.

The menu is comprised of a wide array of options from snacks to small plates, large entree, and a multi-course tasting menu. The dishes prepared at Parallel Post use ingredients that are sourced from local vendors, including seafood from Norm Bloom & Sons in Norwalk, Conn. and Foley Fish in Boston, Mass., meats from Ox Hollow Farm in Roxbury, Conn., cheeses from Coach Farms in Pine Plains, N.Y. and Beltane Farms in Lebanon, Conn. and greens from Gilbertie’s Herb Gardens in Westport, Conn. The menu changes often depending on what is available.

Fire Roasted Copps Island Oysters, preserved lemon  butter, smoked bacon

Notable dishes include the Fire Roasted Oysters with preserved lemon butter and smoked bacon. Chef de Cuisine Ali said we’d become a fan of oysters once we tried her dish, and surely, we did. The oysters were perfectly cooked, and so delicious. If you see it on the menu, we urge you to try it. We also recommend pairing it with a glass of Alamos Torrontes, a white wine that is similar to a Sauvignon Blanc.

The Clams BLT is another wonderful dish. It’s not your typical BLT sandwich, the dish comes in a bowl. The clams absorb the flavors of the spicy tomato broth and the smoked bacon, and the romaine lettuce is actually grilled.If you’re a chowder fan, you must try the Seafood Chowder. This cream-based soup is chock full of clams, mussels, fish, and potatoes. The chowder is rich and savory. Another great choice is the Chicken Soup which has bison meatballs and hearty vegetables. Very wholesome and comforting.

Meat lovers should try the Flatiron Steak or the Roasted Chicken. The chicken is a big portion, and well worth the price. It’s probably the best roasted chicken we’ve had. The meat is juicy, the polenta mixed with goat cheese was a delicious combination. Both dishes pair well with a glass of Laetitia Pinot Noir, a rich and earthy American wine aged in French oak.

For dessert, try the Warm Valrhona Chocolate Cake with vanilla ice cream or the Roasted Banana Créme Brulee. Both are rich and delicious.
