Recipe: Turkey Chili

I normally cook turkey with ground beef. A healthier alternative to ground beef is ground turkey – even better, ground lean white meat turkey.

Ingredients:
1 lb. ground lean white meat turkey
5 garlic cloves, minced
1 yellow onion, chopped
2 jalapeno or serrano chilis, diced (If you want heat, keep the veins and seeds)
1 can (28 oz.) chopped (or diced) tomatoes with juices
4 tbsp. chili powder
4 tbsp. cayenne pepper
1 tsp. ground cumin
1 (15-oz) can red kidney beans, drained and rinsed
1 tbsp. canola oil
Salt and freshly ground pepper, to taste

Toppings
Grated cheddar cheese
Chopped onions

Directions:
1. In a medium/large pot over medium-high heat, heat the canola oil and brown the turkey for about 4 minutes.
2. Add the garlic, yellow onion, and jalapeno/serrano peppers and cook until meat is cooked, stirring often.
3. Add the tomatoes with juices, chili powder, cayenne pepper, cumin, salt, pepper, and stir to blend.
4. Cover and cook for 45 minutes. Add the kidney beans and cook for another 15 minutes.
5. Serve with toppings of your choice.
