For me, the perfect macaroni salad has to have the right amount of mayonnaise, carrots and celery, as well as al dente macaroni. I like my macaroni salad to have minimal amounts of mayonnaise – it shouldn’t be bathing in it, but lightly covered. The carrots and celery must by finely chopped.
