Recipe: Sauteed Chicken with Garlic Shrimp and Salad

My hangar steak didn’t defrost in time for dinner, so I went to Whole Foods to see what fresh ingredients they had in store for me. I was hoping to get some salmon, but their supply didn’t look great. I picked up chicken breast and thought to myself – maybe I can do some sort of variation of last night’s dinner, since it was amazing.

Using the same recipe from last night, I sauteed 3/4 pounds of chicken breast. While it was cooking, I prepared the shrimp:

Garlic Shrimp

Ingredients

1 tsp butter
1 tsp olive oil
1/2 lb. large shrimp, peeled and deveined (optional: leave tails on)
3 cloves of garlic, minced
1 pearl onion or small shallot, minced
juice of 1/4 lemon
salt and pepper

Directions

Place peeled and deveined shrimp in a bowl. Add 1 teaspoon of salt and 2 teaspoons of freshly ground pepper. Add the garlic, onion, and lemon juice. Mix well.

In a skillet, heat butter over medium-high heat. Add the shrimp mixture. Saute for 3 minutes. Add olive oil. Cook until shrimp is fully cooked about 5 minutes.

Serve over a bed of your choice of greens.

I cut up some red leaf lettuce, placed my cooked chicken on top of it, and used the shrimp as my side garnish.
